Πριν μπούμε στο «ψητό» να δώσουμε μια γενική εικόνα γι αυτό που έπεται.
Το sous vide που σημαίνει «εν κενώ» είναι απλώς ένας τρόπος μαγειρέματος.
Γι αυτό πρόκειται, όσο μυστηριώδες κι αν ακούγεται…
Το sous vide ή Soft Cooker είναι «απλά» μία μέθοδος μαγειρέματος και επίσης είναι «απλή».
Το αποτέλεσμα όμως αγγίζει την «επιστημονική φαντασία».
Κλείστε τα μάτια και φανταστείτε λοιπόν........ένα ζουμερό, καλοψημένο και μυρωδάτο φιλέτο απ’ αυτά που λαμβάνουν διαστάσεις «θαύματος» στο μυαλό σας.
Τώρα διαγράψετε την εικόνα οποιουδήποτε εστιατορίου από το background του μυαλού σας και μάθετε πώς συνέβη αυτό το «όγδοο θαύμα» του κόσμου έτσι απλά σε οποιοδήποτε μέρος.
Τι είναι το Sous vide ή Soft Cooker
Σημαίνει: «εν κενώ» κι αυτό διότι το προϊόν των κάθε φορά «ορέξεων» σας, μαγειρεύεται σε κλειστή σακούλα μαγειρικής από την οποία έχει πρώτα αφαιρεθεί ο αέρας με ένα Vaccum και η οποία «εμβαπτίζεται» κατά την sous vide-ική διάλεκτο, βυθίζεται δηλαδή σ’ ένα σκεύος με ζεστό νερό σταθερής θερμοκρασίας. Σ’ αυτό μέσα, ή τοποθετείτε μια κεφαλή sous vide ή έχετε σκεύος με ενσωματωμένη την κεφαλή sous vide κι εκεί επί ώρες σιγομαγειρεύεται το «αντικείμενο του πόθου σας» σε σταθερή-χαμηλή θερμοκρασία που έχετε ορίσει από την αρχή ανάλογα το προϊόν προς μαγείρεμα.
Γιατί Sous vide;
Για δύο λόγους. Έναν απλούστατο κι έναν πολυπλοκότατο. Ο πρώτος είναι διότι το αποτέλεσμα, το κρέας εν προκειμένω είναι ασύλληπτα ζουμερό και νόστιμο κι ας μην παρουσιάζει την συνήθη ωχρότητα που του αποφέρει ο φούρνος μας, και ο δεύτερος είναι η σαφέστατα πιο υγιεινή μέθοδος παρασκευής του γεύματός μας.
Γιατί πιο υγιεινή;
Διότι η ήπια θέρμανση των υλικών γίνεται σε κενό αέρα και σταδιακά, πράγμα το οποίο σημαίνει ότι οι φυσιολογικές μεταλλάξεις πρωτεϊνών, σακχάρων και λιπών που εμπεριέχονται στο προϊόν, με το sous vide αλλάζουν το ελάχιστο δυνατόν. Εν ολίγοις: Δεν χάνεται η θρεπτική αξία.
Τι χρειάζεστε για το Sous vide
Χρειάζεστε φυσικά τα υλικά του γεύματός σας, σακούλες κενού, συσκευή αφαίρεσης αέρα τα γνωστά ως vacuum, συσκευή soft cooker δηλαδή συσκευή Sous Vide και όρεξη για καλομαγειρεμένο, ζουμερό, ιδιαιτέρως εύγεστο πιάτο.
Συνηθίζεται μετά το μαγείρεμα από την μέθοδο Sous Vide, να περάσετε το προϊόν από ένα ελαφρύ τσιγάρισμα, ή από φούρνο σε υψηλή θερμοκρασία για λίγα λεπτά ή να χρησιμοποιήσετε φλόγιστρο καψαλίζοντας την επιφάνεια του προϊόντος απλά για να πάρει μια πιο γνώριμη όψη στο πιάτο μας .
Αντίο Παράδοση ;
Όσοι έχετε ταξιδέψει στη Βόρεια Ευρώπη (κυρίως Γαλλία) θα έχετε παρατηρήσει την αποστραμμένη όψη της mademoiselle που σας παίρνει παραγγελία, όταν πασχίζετε στ’ αγγλικά ενδεχομένως να της περιγράψετε την παρ’ ολίγο καρβουνιασμένη μπριζόλα την οποία επιθυμείτε να σας φέρει (γιατί έτσι σας αρέσει). Έχει κι από τη φύση της αυτό το αφ’ υψηλού, είναι και λίγο η γαλλική μύτη με την ανοδική πορεία που κάνει το σαρίκι να φυτρώνει στο κεφάλι σας κάνοντάς σας να νιώθετε πολύ πιο ανατολίτης απ’ ότι προχθές που προσγειωθήκατε, ΟΜΩΣ ίσως τελικά, και χωρίς κι εκείνοι να γνωρίζουν καλά-καλά τον λόγο, μαγειρεύουν το κρέας με πιο υγιεινό τρόπο και με αποτέλεσμα πιο μαλακό και πιο εύγεστο. Εκείνοι μισοψήνουν το κρέας, το sous vide το καλομαγειρεύει και το αποτέλεσμα του sous vide βεβαίως υπερτερεί σε ποιότητα. Ίσως οι υψηλές θερμοκρασίες της πατρίδας μας, οδήγησαν στο πολύ καλό ψήσιμο του κρέατος, λόγω ταχείας αλλοίωσης του. Και νόστιμο και θεμιτό και ο νότος με το ταπεραμέντο του επιβάλλει συνήθειες και γεύσεις που αν μη τι άλλο είναι νόστιμες και ας μην ξεχνάμε ποτέ πως η μεσογειακή διατροφή διδάσκει όλες τις υπόλοιπες, πλην όμως υπάρχει κι ένας εναλλακτικός τρόπος που έχει προστεθεί στη γαστρονομία κι αυτός είναι το Sous Vide. Δεν θα πούμε άλλα. Σκεφτείτε το.
Συνταγή για Sous Vide Πικάντικο Κοτόπουλο
Χρόνος προετοιμασίας: 30’
Χρόνος μαγειρέματος: 3ώρες
Θερμοκρασία: 60 °C
Μερίδες: 4
Υλικά
8 μέτρια κομμάτια κοτόπουλου
2 φλιτζάνια ανθόγαλα
½ φλιτζάνι sauce κοτόπουλου πικάντικη
2 φλιτζάνια αλεύρι
4 κ.σ cayenne σε σκόνη
1 κ.σ ζάχαρη καστανή
1 κ.γ σκόρδο σε σκόνη
1κ.γ αλάτι
1κ.γ πάπρικα γλυκιά
1κ.γ σκόνη τσίλι
1φλιτζάνι λάδι canola
Εκτέλεση
Από το προηγούμενο βράδυ, βάζουμε σ’ ένα μεγάλο μπολ το ανθόγαλα, την σάλτσα κοτόπουλου, το λάδι canola και προσθέτουμε το κοτόπουλο.
Ρυθμίζουμε την συσκευή μας Sous Vide στους 60 °C, αλατίζουμε το κοτόπουλο και το τοποθετούμε στην σακούλα vacuum ενώ κρατάμε το μείγμα του ανθόγαλου, της σάλτσας κτλ που μαρινάραμε το προηγούμενο βράδυ.
Τοποθετούμε το κοτόπουλο στη συσκευή Sous Vide για τρεις ώρες.
Έπειτα, βάζουμε σ’ ένα μπολ το αλεύρι και σ’ ένα άλλο τη μαρινάδα μας. Περνάμε το κοτόπουλο από το αλεύρι, μετά από τη μαρινάδα και πάλι από το αλεύρι, το αφήνουμε να ξεκουραστεί για 15’.
Ζεσταίνουμε λάδι canola σ’ ένα τηγάνι και τηγανίζουμε το κοτόπουλο μέχρι ν’ αποκτήσει χρυσό χρώμα (3-4 λεπτά).
Βάζουμε σ’ ένα μικρό μπολ το cayenne, την καστανή ζάχαρη, την πάπρικα, το σκόρδο, αναμειγνύουμε τα υλικά, βουτάμε το κοτόπουλο και απολαμβάνουμε!

Και λίγη ιστορία του Sous Vide
Το sous vide, το μαγείρεμα δηλαδή σε χαμηλή θερμοκρασία για πρώτη φορά έγινε γνωστό από τον Benjamin Thompson-Count Rumford το 1799 ο οποίος χρησιμοποίησε αέρα ως μέσο μεταφοράς θερμότητας στα πειράματά του προσπαθώντας να ψήσει κρέας σε μια μηχανή που εφεύρε για να στεγνώνει πατάτες. Σύμφωνα με τα λεγόμενα του Thompson το κρέας ήταν: «όχι μόνο βρώσιμο, αλλά τελείως λιωμένο μέχρι μέσα και μοναδικά εύγεστο». Στα μέσα της δεκαετίας του 1960 εφαρμόστηκε η παρασκευή τροφίμων υπό πίεση με ή χωρίς θερμότητα από Αμερικανούς και Γάλλους ως μέθοδος συντήρησης των βιομηχανικών τροφίμων. Διαπίστωσαν τότε κι οι ίδιοι όπως και ο Thompson ότι το φαγητό είχε σημαντικές βελτιώσεις σε γεύση και υφή. Η μέθοδος υιοθετήθηκε από τον Γάλλο σεφ George Pralus το 1974 στο εστιατόριο Troisgros στο Roanne της Γαλλίας, ακολούθησαν κι οι Αμερικανοί επιστήμονες αλλά ο πατέρας του σύγχρονου sous vide θεωρείτε ο προαναφερόμενος Pralus
